Creamy Seafood Stew/Chowder

Ingredients 2 tbsp olive oil or butter 1 large onion, diced well Most of a head of celery (1.5 cups or so), diced small, do this well 1 tsp salt One large carrot, diced small 1 medium zucchini, diced 1 bell pepper, diced 4 cups diced potatoes (gold potatoes best), diced small 1 cup water 16 oz clam juice (can come in 16 or 8 oz bottles) 0.5 cup dry white wine Black pepper to taste 1 tbsp fresh dill 2 lbs thawed, cut to bite size, white/firm fish fillets 4 oz cream cheese, plain 1 cup milk, almond or oat is fine 1 lb small shrimp, peeled and deveined Saltines (to crumble and add in), these really make it good Instructions Warm oil or butter in large soup pot on medium heat. Add onion and salt, cook 5 minutes covered. Add carrots and celery, cook 5 more minutes covered. Add zucchini and bell pepper, cook another 5 minutes covered Add potatoes, clam juice, water, and wine. Simmer covered for 10 minutes at least (more is OK) Add black pepper, dill, and fish. Simmer covered for 5-10 minutes While fish cooks, puree in blender cup of hot soup, milk and cream cheese. Add back to mixture AFTER step 3 Add shrimp and simmer another few minutes until shrimp are cooked Serve with saltines

Garlic Butter Grilled Shrimp

Ingredients Marinade: 2 pounds shrimp (jumbo, peeled) 8 cloves garlic minced 4 tbsp chopped fresh parsley 2.5 tbsp tomato paste 2 tbsp fresh basil chopped 4 tsp lemon juice 1 tsp salt 1 tsp black pepper To brush on after cooking: 3 cloves garlic minced 1/2 cup melted butter 2 tsp fresh parsley chopped Lemon wedges for serving Instructions Using marinade ingredients and in a bowl or bag, marinate for 2 hours Put shrimp on skewers and grill until done (4 min a side is a good starting point or until pink all around, DO NOT overcook) Place on platter and brush on the final set of ingredients. Linguini and Clams in Butter/Garlic/Wine Sauce

Ingredients 1 lb linguine (cook according to package directions) 6 tbsp olive oil 1 yellow onion, diced small 8 or more cloves garlic, minced 1 cup dry white wine (pinot grigio, chardonnay or sauvignon blanc) 1 tbsp red pepper flakes (more or less to taste) 2 pounds littleneck clams (~40 of them), scrubbed (or 1 lb sea scallops, or 1 lb shrimp) 1 small batch parsley, finely chopped 3 tbsp butter 1.5 tbsp lemon juice (more or less to taste) Instructions Cook pasta to package directions and set aside. (If you cook a smidge less (1 min), less than al dente, that can help the final product soak up more juice) In large saute pan (or pot), over med-high heat, cook the olive oil with onion and garlic until just golden (do NOT burn) Add the wine, red pepper flakes, some salt to taste, clams (or whatever seafood you are using), and all but 2 tbsp of the parsley. Bring to simmer and cook, covered, until clams open (6-8 minutes). Discard any unopened clams Add butter and lemon juice and dissolve into the sauce Add pasta to the saute pan and stir while it cooks for another minute or two (goal is to have pasta soak up the juice). If it becomes too dry add a smidge bit of water Add salt to taste and serve

Quick Cajun Gumbo

Ingredients 1 lb peeled shrimp (can be frozen) 1 lb sliced andouille sausage 1 lb white fish (cod, tilapia, whatever) (can be frozen) 1 bundle of green onions, sliced small 1 bell pepper, diced 1 diced yellow onion 1-3 sticks celery, diced small 2 tbsp cajun seasoning (split usage) 1 tbsp or so tomato paste 1 can diced tomatoes drained (doesn’t have to be drained super well) 8 oz clam juice 4 cups seafood stock (kitchen basics is best, other stock can be substituted if necessary) 1-2 bay leaves 1-2 cups white rice cooked according to package directions Instructions In large pot, brown sausage with oil. After browned, remove sausage but LEAVE drippings Add more olive oil and cook all veggies until mostly soft. Add half cajun seasoning Add tomato paste and cook another minute stirring often Add diced tomatoes through bay leaves and bring to a simmer Add sausage back along with all fish. Add last half cajun seasoning. Add garlic salt and black pepper here to taste if desired (not required) Simmer for 20 minutes. Don’t overcook or the shrimp become rubbery! Serve over white rice

Spicy Caribbean Fish

Sauce: 1 tbsp olive oil 1 large minced onion 1 tsp salt 1-2 hot pepper (hotter the better), minced 2 garlic cloves, minced 1 tsp thyme 2 cups diced fresh tomatoes ½ cup unsweetened coconut milk 1 tsp lime zest 2 tbsp lime juice 3 tbsp fresh cilantro Fish 2 pounds firm, white fish filets (any # to reach this weight is fine, big or small filets) Thaw prior to starting recipe or buy fresh filets. Black pepper ground and salt to taste Rice 1.5 cups raw rice plus 3 cups water, cook as per package directions and set aside Fresh Greens 2 bunches of kale (or 8 cups), cut into 1/2" or shorter sections 4-5 cloves garlic, minced Olive oil Few tbsps red pepper flakes, salt, black pepper Instructions Fish and sauce: Mince onion. Then heat oil and cook onion in sauce pan on medium heat for a few minutes. Mince pepper and garlic then add to sauce pan. Add thyme and cook for a few more minutes stirring often. Stir in the tomatoes, increase heat to med high, and cook for a couple minutes until tomatoes are juicy, stirring often. Add the coconut milk, bring to simmer, and cook a few minutes. Stir in the lime zest, juice, and cilantro. Stir and set sauce aside (if it cools, that is OK). Preheat oven to 400 F. Grease large baking pan with significant rim (to hold in the sauce), and place fish filets as single layer. Sprinkle with pepper and salt to taste and then bump ALL sauce into pan. Cook at temperature for 20-30 minutes. Serve over rice with extra sauce to soak in the rice. Instructions Fresh Greens: Heat oil and add garlic plus red pepper flakes. Saute for a minute or so. Then add kale as much as you can fit. Add more as it shrinks. Saute and add pepper/salt to taste until greens are limp and tender. Serve immediately. Notes: Greens have to be served immediately. Time it well or they will be cold. Extra sauce is not a bad thing. Can be served over coconut rice if you have it or quinoa.
