Homemade Black Bean Tostadas with Lime and Fajita Veggies
Fresh tostadas with homemade refried beans, fajita vegetables, and chili lime slaw

Black refried beans:
- Can black beans plain
- One minced and seeded jalepeno
- 1/2 large red onion minced
- 3 cloves garlic minced
- Tsp cumin powder
- Tsp chili powder
- Tsp garlic salt plus more to taste
Tortillas:
- Small corn tortillas (1 pack. At least 10)
Veggies (pick at least 3 and stir fry in cumin and chili powder, below is an example):
- 2 bell peppers, sliced and chopped to thin 1.5 inch lengths (or just dice it…)
- 1 zucchini, same as pepper
- 1 yellow zucchini squash, same as pepper
- 1 large red onion, same as pepper but quarter moons
Chili lime slaw (this is excellent on tacos or tostadas):
- 3 cups red or green or both types of cabbage, shredded
- 1 large jalapeno minced (seeded or not depending on spice desired)
- 1 bunch cilantro, chopped
- 3 tbsp lime juice or more to taste
- Tsp salt or garlic salt or more to taste
Other Toppings:
- 2 tomatoes, without core, diced
- 1 avocado, inside in small chunks to grab
- Cojita or fresca crumbly cheese
Instructions
- Harden tortillas (dealers choice on method), I use an air fryer for ~10 minutes. Goal is flat and crisp tortillas. Don’t overcook as you don’t want crumbly or overly burnt. Set aside
- Make slaw: mix ingredients in bowl, cover, and set aside
- For the beans, this takes some time. Cook olive oil, garlic, jalapeno and onion on medium until cooked. Add spices and cook for another couple minutes. Add beans and lime juice and simmer at least a few minutes until the desired thickness is achieved. Some crumbly cheese can be added to thicken after it is cooked
- Assemble: tortilla, beans, veggies, slaw, cheese, tomato, avocado. Enjoy!
