Greek Gyros
Authentic homemade gyros with seasoned meat, tzatziki sauce, and fresh toppings

Meat:
- 1 lb 80/20 ground beef
- 1 lb ground pork or lamb
- 1 red onion
- 7 cloves garlic
- 2 tsp ground marjoram (or sub 1.5 more tsp oregano)
- 2 tsp dried rosemary
- 2 tsp dried oregano
- 2 tsp salt
- 2 tsp black pepper
Tzatziki Sauce:
- 1/2 cup finely grated cucumber
- 1 cup whole milk plain greek yogurt
- 1 tbsp lemon juice
- 1/2 tbsp olive oil
- 1 garlic clove minced
- 1/4 tsp salt
- 1 tbsp chopped fresh dill (or 0.3 tbsp dried dill)
- 1 tbsp fresh mint chopped (optional if you have it)
Toppings:
- Feta cheese crumbles
- 3 roma tomatoes sliced
- 1 red onion sliced thin and cut in half or smaller
- Romaine heart lettuce, cut into 1" squares or slightly larger
- Optional hot sauce
- 8 pita breads
Instructions
- MEAT: With a larger food processor, process garlic and onion of the meat section until minced. Add meat and seasonings and process for at least a few minutes (3+ min). It is really critical that it is mixed well or it tastes very uneven. Then put in an oven dish like a meatloaf and flatten the top. Bake at 350°F for 1 hour. Remove from the oven, drain grease, and wrap the “meatloaf” in tinfoil. Place it on the counter and add at least a few pounds of weight on top of it (using a frying pan with a few cans in it works) and let sit for 30+ min for it to settle. This also usually pushes more grease out so do it somewhere it is easy to clean. Finally, cut the meat thin to serve
- Meanwhile, mix all the tzatziki ingredients in a bowl well and chill in the fridge serving
- Meanwhile, prepare the toppings and chop as needed
- Serve when the meat is sliced. Lather Tzatziki sauce on pita and then throw in all the ingredients
