Fondue (Cheese, Broth and Chocolate)
Triple fondue experience with cheese, broth, and chocolate fondues

Ingredients Cheese:
- ? lb gruyere (grated), ? lb fontina (grated), ? lb gouda (grated)
- 2 tbsp cornstarch
- 1 cup white sauvignon blanc wine
- 3 cloves garlic minced
- 1 tbsp lemon juice
- 1 tbsp brandy or whiskey or cooking sherry or whatever
- 1 tsp mustard (dijon or stone ground)
- ? tsp nutmeg
Ingredients Broth:
- 4 full heads of garlic
- 3 tbsp olive oil
- 1 onion finely chopped
- 1/2 cup sherry wine (or red wine)
- 6 cups chicken broth
- Salt and pepper to taste (a decent amount)
Ingredients Chocolate:
- 20 ounces dark chocolate small pieces (the baking bits are perfect).
- 1.7 cups heavy cream (more or less for thicker or creamier fondue)
- 1 tsp vanilla extract.

Instructions Cheese:
- Grate all cheeses and combine with cornstarch in large bowl. In fondue pot, bring wine, garlic, lemon to simmer for >1 minute and slowly add the cheese stirring well all the while. Once smooth, stir in the rest of the ingredients. End result should be softly bubbling cheese. Turn down if going to sit awhile with no one eating.
Instructions Broth:
- On garlic heads cuts ends off (do not peel), drizzle with oil, and wrap in tinfoil all together. Put in oven at 400 F for 50 minutes. (if you keep the head all attached this is easier). Once done, squeeze out the carmelized garlic as a puree and set aside.
- In fondue pot (if you have the heat) or pan, brown the onion in oil. Then pour in the wine, deglaze and reduce it by half. Then add broth and garlic puree. Simmer for 5 minutes and season with salt and pepper.
Instructions Chocolate:
- Combine ingredients in fondue pot and gently heat on low power until smooth, stirring all the while. It does not take much heat here to do the job.
Dipping ideas:
- Cheese (steamed broccoli or potatoes, apple slices, pan seared sausage slices, bread bits, pears, etc.)
- Broth (uncooked thin steak (top shelf), uncooked veggies like broccoli, sliced pepper, mushrooms, etc.)
- Chocolate (strawberries halved, blueberries, blackberries, banana sliced, apples, pears, cut up rice crispy treats, pound cake, etc.)
