Triple fondue experience with cheese, broth, and chocolate fondues

  1. Grate all cheeses and combine with cornstarch in large bowl. In fondue pot, bring wine, garlic, lemon to simmer for >1 minute and slowly add the cheese stirring well all the while. Once smooth, stir in the rest of the ingredients. End result should be softly bubbling cheese. Turn down if going to sit awhile with no one eating.

Instructions Broth:

  1. On garlic heads cuts ends off (do not peel), drizzle with oil, and wrap in tinfoil all together. Put in oven at 400 F for 50 minutes. (if you keep the head all attached this is easier). Once done, squeeze out the carmelized garlic as a puree and set aside.
  2. In fondue pot (if you have the heat) or pan, brown the onion in oil. Then pour in the wine, deglaze and reduce it by half. Then add broth and garlic puree. Simmer for 5 minutes and season with salt and pepper.

Instructions Chocolate:

  1. Combine ingredients in fondue pot and gently heat on low power until smooth, stirring all the while. It does not take much heat here to do the job.
