Country Potatoes and Bravas Sauce
Spanish-style fried potatoes with creamy spicy bravas sauce
Ingredients

- 2 pounds potatoes cut into 1 inch size chunks or smaller if you want it to cook quicker
- Olive oil
- Salt
- Black pepper
Bravas sauce ingredients (approximate, see note 2)
- 1 cup raw cashews (see note 1)
- 1/4 cup olive oil
- 2 tbsp white wine vinegar
- 1 tbsp yellow mustard
- 1 tsp maple syrup
- 2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 tsp salt
- 6 tbsp water
Instructions
- Season the potatoes and then bake, or air fry, or just plain fry until cooked through. and barely crispy. You can microwave them a little first to help speed this along, otherwise with cuts that large, it takes awhile. Don’t burn them.
- Mix all the bravas sauce ingredients together in food processor.
- Serve on plate with bravas sauce lines over the potatoes.
Notes:\
- Cashews can be substituted easily. White northern beans or garbanzo beans work fine as long as you rinse and drain them well.
- Proportions are approximate. At the end, taste and adjust to get a savory taste. I usually end up adding a little more yellow mustard when using beans instead of cashews.
